My favorite office plant is the spathiphyllum, also known as peace lily or white flag. It's fairly resistant to abuse (watering it when it's so dry that it's drooping onto your cubicle surface will revive it) and is said to help clean office air.

If you really want drop dead simple, get one of the bamboo in a vase sort of plants. Just water it when you don't see water in the rocks.
